Great Grandma Ahlquist’s Almond Toast (Svenska Mandel Skorpar)

Almond toast is a hybrid between a shortbread cookie and a biscotti.  My brothers and I would get this sweet treat as part of our breakfasts when visiting my Swedish grandparents.  I make almond toast every Christmas now that my ninety-two-year-old grandma is no longer physically able to do so. Like most Swedish baked items, almond toast is buttery with a subtle almond flavor.  My family enjoys them with their morning and evening coffees.  Njut!

Ingredients:

  • 1 cup butter (softened)
  • 1 cup sugar
  • 1 cup sour cream
  • 2 eggs
  • 1 tsp. pure almond extract
  • 4 cups flour
  • ¼ tsp. salt
  • ½ tsp. baking soda
  • ½ tsp. baking powder
  • ¾ cup finely chopped (roasted) almonds

Directions:

  1. Preheat oven to 350° F.
  2. Mix together butter, sugar, sour cream, eggs, and almond extract.
  3. In a separate bowl mix together flour, salt, baking soda and baking powder.
  4. Add (¾-1 cup at a time) the flour mixture to the butter mixture, and mix well.
  5. Add almonds to batter.
  6. Transfer batter to a greased pan (I use a glass 9″x13″ baking dish and a glass bread pan)
  7. Bake for 45 minutes.
  8. Cut into strips, remove from pans, and place strips on a cookie sheet.
  9. Return to oven (250° F) to dry and lightly brown for 45 mins-2 hours (I like them on the more toasted side, so I dry for 1.5-2 hours).
  10. Cool, and store in an airtight container.

Speak Aloud

As the year and Project 365 comes to a close I have been thinking of what to do next.  A new “project” mayhaps.  I want to move away from digital and back to film, but developing film is so stinkin’ pricey — what a little consistent employment wouldn’t solve.

Working Weekends

I have had the distinct “joy” of working through my weekend.  Nothing quite rings in the holiday cheer like 10-16 hours days filled with research and writing, and my back beginning to imitate the curvature of my 92-year-old grandma’s osteoporosis-ridden spine.  Ba humbug.

Boom Roasted.

I made my third and fourth attempts at making beer brittle today.  Thankfully the third attempt worked!  I think I was just pressing my luck by trying a fourth and final.  “Waste not, want not,” well today it was more like, “waste not, scrub the pot of more burned brittle.”  Oh well.

TW, your Old Rasputin beer brittle will be on its way to you in the very near future!

Beaten by Brittle

I attempted to make beer brittle this afternoon.  Having never made candy I had no idea what I had committed myself to, or the amount of cleaning, er, scraping required.

Round 1.  I ran upstairs to grab something. Bad idea.  I returned to the pot boiling its contents all over the stove.  Mmm.

Round 2.  The recipe indicated the total time for making brittle was 25 minutes.  That time elapsed with the candy only reaching 210°F of the required 310°F.  Another twenty minutes of simmering brought it to 250°F.  Five minutes later, it was at 330°F and beyond burnt.  Yum.

Final Score:  Brittle-2, E-0.

Beer brittle, you will not beat me again.  I will see you again; and when I do I would greatly appreciate your being in your proper non-burnt, non-boiled-over state.  Please and thank you.
